Ingredients:

  • 1 lb organic, pasture-raised chicken breasts
  • 1 organic Vidalia onion, diced
  • 3 celery stalks, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 tbsp avocado oil
  • 2 cans organic diced tomatoes
  • 1 jar organic artichoke hearts, chopped
  • 1 tbsp fresh thyme
  • 1 tsp ginger-honey vinegar (or any vinegar of choice)
  • Salt and pepper to taste
  • Organic fusilli pasta for serving

Instructions:

  1. Set your pressure cooker or instant pot to sauté mode. Add avocado oil and heat.
  2. Sauté the onion, garlic, celery, and carrots until softened (about 5 minutes).
  3. Push vegetables to the sides and add chicken breasts. Brown for 1 minute per side.
  4. Add diced tomatoes, artichoke hearts, thyme, vinegar, salt, and pepper. Stir to combine.
  5. Close the pressure cooker lid and cook on high pressure for 13 minutes.
  6. Allow for a natural pressure release.
  7. While the soup is cooking, prepare fusilli pasta according to package instructions.
  8. Serve the soup over a bed of fusilli pasta.
